Serrano Pepper
Charro beans
A staple of Mexican cooking: beans simmered with bacon and topped with pork rinds, avocado, and fresh serrano pepper.
Ingredients
- 100 g queso fresco, in small pieces
- 2 cups cooked whole pinto or mayocoba beans
- 2 tablespoons oil
- 100 g bacon, chopped
- 1 cup pork rinds
- 2 serrano peppers
- 1 avocado
- 1/2 cup chopped tomato
- 1/2 onion, finely chopped
- Salt to taste
Preparation
- In a pan with oil, sauté the onion and bacon until lightly golden.
- Add the beans, let them come to a boil, and season with salt.
- Serve in a bowl and top with the pork rinds, avocado, serrano pepper, and tomato.
- Finish with the queso fresco pieces on top and serve hot.
